The beautiful soaked blueberry muffins by Jessica Myers are pure delight. My new found love for sprouted flour has me tweeking recipes to save even more time. Then I was out of the muffin liners so I dumped it all in a cake pan! 

Magic happened, I was now able to dump everything into one bowl, stir it up, pour in a cake pan and have the most delicious easy peasy breakfast bars! Without further ado... oh wait, I almost forgot. I double this recipe when I make it because it's on my absolute favorite recipes list! Which means I make double as these bars are perfect for freezing! Also, I eat two bars and enjoy collagen in my drink or have a speedy chocolate milk with it! Grab and go at it's finest! Okay, without further ado, here is a video on how to make them and the written recipe is at the bottom. I've got your back girl! 




Sprouted Blueberry Breakfast Bars (THM-E)
 


Ingredients:

Follow her recipe (only I used)
  • 1 cup on plan sprouted flour instead of soaking the flour
  • I also added 1/2 cup of gentle sweet. 

These are the new steps I followed
  1. Preheat oven to 350 F and gently spray a cake pan with coconut oil cooking spray.
  1. Add all the ingredients (except blueberries) in a bowl, mix well. Gently fold in the blueberries.
  1. Pour the batter in cake pan, bake for 20-25  minutes or until a toothpick comes out mostly clean.

It's my mission to find recipes my family loves and is nourishing to their body.  Can I get an AMEN?  So here is the best waffle recipe ever, in their opinion. It's super simple to make and freezes great! 

Ingredients: 
- 3 cups of sprouted flour (I buy mine from Lindley Mills or you can get some from Amazon)
- 4 tsp baking powder
- 1 tsp salt
- 1/4 cup gentle sweet 
- 1/2 cup of egg whites
- 3 cups of almond milk
- 2 TBSP of butter
- 2 tsp vanilla extract

Instructions: 
  1. In a mixing bowl, whisk together the flour, baking powder, salt, and gentle sweet and stir, add in the egg, milk, melted butter, and vanilla. 
  2. Allow the batter to rest while you preheat your waffle iron.
  3. Lightly spray your waffle iron, and add 2/3 cup of mixture.
  4. Cook for 3 minutes. 
This made 8 waffles for my belgian waffle maker which is less than 1 tsp of butter per waffle. I enjoy this recipe with slim belly jelly from the THM cookbook on page 478. I will enjoy a chocolate milk to the meal to round out the protien. Just unsweetened almond milk, and on plan whey chocolate protien powder. My kids love this with maple syrup and added butter on top for a cross over.

Traveling Hotel Meal- Chicken Beans Rice bowl - THM E

We love to travel! I want my children to see the world. So I have mastered making meals in the hotel room. This saves so much money and allows me to say yes to all the "Mom can we...." request of my children. 

Look at what one of the "Mom can we go to the arcade" did for our sweet daughter tonight. #momwin 


I love making this chicken, beans and rice bowl. Everything is shelf stable, Praise the Lord, for not having to keep it cold while on the go. I bring my Instant pot on the journey with us when we are driving to the destination. If we are flying this will go in the checked luggage and I'll use a pot at the air bnb or hotel kichenette. You can always order the ingredients with grocery pick up now a days too. 



Chicken, beans and rice bowl THM E 

Ingredients: 
2 Cups of Brown Rice
2 cups of water
2 cans of chicken breast
1 can of black beans- drained and rinsed
1 can of diced tomatoes- drained
1 can of rotel 

Instructions: 
1. Cook rice in instant pot ( 2 cups of rice and water) bring to pressure for 22 minutes, slow release for 10 minutes. 
2. Add the rest of the ingrediants, bring to pressure for 3-5 minutes to heat everything up
3. Enjoy over lettuce, in a bowl or use baked tostitos chips to dip. 

This is a THM E meal. Be mindful that 45 net carbs is the highest amount of carbs to enjoy on an E meal while staying in weight loss mode. I don't bring or add any seasoning as this is a drive thru sue special and saved us from the pizza Great Wolf Lodge had floating around. This serves 6- 8 people. Feel free to add more beans and tomatoes as fillers. 

Bonus Tips:
When I'm really in a pinch, I use the microwave bags for brown rice or even cauliflower rice. At home I will make this with half frozen cauliflower rice and 1/2 brown rice to make it lighter on the carbs. When we came to our room from the water park for lunch I made the rice, so when it came time to make dinner it was dump, heat and serve within 10 minutes.
